NUTRITION Q: What are some ways I can add in more veggies without breaking my budget? A: Great question and one I have addressed Jessica Carter before. Getting enough vegetables in our diet R can feel difficult no matter what but this time of year it can feel especially hard because fresh veggies seem so expensive. I usually suggest that my clients explore some of the less popular vegetable options this time of year. A head of cabbage, for example, is incredibly cheap and makes a great alternate for lettuce in a taco. Another idea is to steam cabbage then add in some spinach, cilantro and lemon juice. You could even sauté it in some avocado oil on the stove. I have also seen great recipes for baked cabbage and cabbage rolls. Other less popular but delicious vegetables to try would be; celeriac root, golden beets, red beets, rutabagas, parsnips, cauliflower, and kohlrabi. All of these can be cooked or used in a variety of ways that you may have never even heard of.
