NUTRITION Q: What is your food to "health-ify"? favorite Thanksgiving A: What a great question. There are many Thanksgiving dishes that can be changed into a healthier choice so it is hard to pick one. But the one dish that we don't bother with much at all is the cranberry sauce. So many Americans open a can of gelatinous goop and call it good. But what if they were to take the time and cook the cranberries down, add some spices like cloves or cinnamon, and add maybe a titch of sweetener just to cut down on the tartness. There are recipes using everything from grated ginger to cardamom pods to port wine. My favorite version adds blueberries for sweetness instead of sugar or honey. It is good to note also that cranberries are a great source of antioxidants including vitamin C so it behooves you to keep them on the menu. If anyone finds a great, healthy cranberry recipe, please send it my way! Have a happy and safe holiday.
